Tetrazinni Recipe

I've had a couple of people ask for my chicken/turkey tetrazinni recipe.  This comes in handy after Thanksgiving when you have run out of ideas for leftover turkey.  I'm betting it would be great with any kind of meat!  Here 'tis, with my own annotations:

Ingredients:
1/4 cup butter or margarine.
1/4 cup flour.
1/2 tsp. salt.
1/4 tsp. pepper.
1 cup chicken broth. (I use one cube of chicken bouillon dissolved into a cup of water in the microwave)
1 cup half and half (I just use skim milk.  The result is the same.)
2 tbsp. sherry (optional).  (I don't use this.)
7 oz. broken spaghetti pieces, cooked and drained.
2 cups cooked chicken or turkey, cubed.  (I just use a larger can of white meat chicken, or whatever leftover chicken or turkey there is in the fridge.  It doesn't usually come up to 2 cups, but doesn't hurt the recipe at all.)
1 small can of sliced mushrooms.  (I don't use this.)
1/2 cup of grated Parmesan cheese.

Directions:
1.  Cook spaghetti and drain.
2.  Meanwhile, melt butter in a large skillet over low heat.  Add flour and seasonings.  (This makes a roux.)
3.  Gradually whisk in the broth and milk until smooth.  Heat to bubbling.
4.  Add all of the other ingredients and stir until blended.
5.  Place all in an 8x8x2 baking dish.
6.  Sprinkle Parmesan on top.
7.  Bake at 350 degrees for 30 minutes.

This recipe supposedly feeds 6, but a hungry family might need to double it.  In that case, put it in a 9x13 baking dish.  The leftovers are great!

PS.  I often throw in a drained can of green peas in Step 4 because I think they taste great with this recipe, and having a veggie in there makes it a whole meal.  But if you don't like peas, I think a can of cut green beans (drained) or a can of sweet corn (drained) would be just as tasty.

PPS.  I'm betting that this would also be tasty with other kinds of meat, although I've never tried them.

PPPS.  This was the recipe my mom sent me sooo many years ago.  She didn't use all of the ingredients, either, but I wanted to share it exactly as she sent it.  Enjoy!
